A very high hardness of 62-63 HRC is the dream of any user - the knife keeps sharpening perfectly.
However, usually with this hardness, the blades become brittle. Not with PGK steel! 
Having no analogues, this German steel can withstand very high loads even at such a high hardness. 
Due to the high content of alloying elements (carbon, tungsten, vanadium, molybdenum, silicon), this steel is characterized by aggressive cutting and high wear resistance, that is, it keeps the edge sharp.
At the same time, the blades are very strong and resistant to chipping, even at a high hardness of about 62-63 HRC.
